That being said, these appetizers were still gobbled right up. Every last one. For an added bonus, it looked very festive. Merry Christmas!
This recipe took me about 30 minutes to complete, from the moment I entered the kitchen until I walked out with my finished platter. However, if you are able to buy store-bought hummus, I believe you could whip up this treat in about 15 minutes.
Here's what you'll need to make 25 bites (adjust recipe depending on party size):
- 4 cucumbers, sliced 1/2 inch thick (this helps people to grab and pick up the cucumber bite)
- hummus (store-bought works, but I made my own hummus using this recipe)
- 1 red bell pepper
- 1 green bell pepper
- paprika
I started out by making my hummus, then slicing up my cucumbers. Using a small spatula, I scooped a small, rounded portion of hummus onto each cucumber slice.
Next, I added a sprinkle of paprika on the top of each cucumber hummus bite. Using half of a green and red bell pepper, I chopped small slivers and stuck about 3 pieces into the hummus of each cucumber bite. I alternated between a 2-green-1-red and 2-red-1-green pattern.
With the remaining halves of each bell pepper, I cut slices to stick into the remaining portion of hummus (which I placed in the center of the platter).
And you're done!
Stick these in the refrigerator until you're ready to serve to guests.
